Easy peasy mini egg cakes

Happy Easter to all of you! I hope you all had a wonderful weekend! I know this post is a little late but I thought I would share with you a simple Easter recipe that you can use with any left over chocolate. In fact you can even use Easter egg chocolate too! Today I am making my easy peasy corn flake mini egg cakes. For the ingredients you will need:-

– A couple of large bars of your favourite chocolate. I picked dairy milk for these.

– Corn flakes (you can use Rice Krispies) I prefer corn flakes because to me they taste better!

– A small bag of mini eggs.

Method:-

  1. ­To start break up your choice of chocolate into small squares and place in a normal sized cereal bowl. Place the bowl into a sauce pan filled with boiling water and simmer until all the chocolate has melted.
  2. Once all the chocolate has melted start adding in the corn flakes. Ensuring you mix it all together until all the corn flakes are evenly covered with chocolate.
  3. Next you will need cupcake holders to place the chocolate cakes in. Using a spoon place in one at a time. Add your mini eggs on top and place in the fridge until set. Enjoy!

Below I have shared the method in photographs too, plus the end result which looks and tastes delicious! (Also I didn’t get a chance to eat any because Kie ate them all)! But they must have been good for him to do that ha ha!
